Potatoes are weird in how they can be propagated with water + light. My family seems to have GI issues with any green or eyes on the potato. We just cut them out and its fine.Makes me wonder if there are different medicinal aspects depending on the stage of growth.

Interesting idea:If the trajectory of the potato plant's chemistry is a response to soil properties & soil microbes, there might be a way to have the plant produce chemical ratios specially tailored to fight pathogens spiked into the soil.
