/ All these "cricket flour" bars and crackers coming to market. Strangely only one makes their own flour - the rest seem to outsource it.

/ The beauty of cricket flour is that you can grow your own stock in a small space! Margins don't make sense for this model. Seems silly.

/ In the food market, price seems to be the biggest factor of market success - especially within the competitive nature of grocery stores.

/ So either you are going to sell product entirely online at a premium, or you are going to sell it online and in grocery stores for cheap.

/ Your competitors are doing the same thing; those who grow and mill their own flour are going to out profit or out volume in this space.

/ So I predict that this boom of interest in cricket flour products is a bubble. The winners in this are not going to be the manufacturers.

/ The manufacturer who nails online sales, makes their own flour, and has first mover advantage (e.g. access to capital) will be winner.

/ Platforms like bittyfoods or tiny farms are important though - they help spurn market interest, which is an important consideration.

/ So I can see larger companies waiting on their laurels for the interest to hit before ramping up their own production.

/ Mfgs with experience should team up with larger flour companies with similar marketing slant (e.g. @KingArthurFlour w/ @chapul ).

/ You are going to need to get in stores to be successful in the long run. Why not skip the middleman and sell the flour directly?

/ Use your bars/cakes/crackers as a vehicle to get adoption. Everyone is treating it like a high-brow food, but this isn't the long game.

/ The long game is going to involve a lot of nasty laws and regulations, so you are going to need a large company's backing in the end.

Localized production & scaling up with low overhead / recaptured plant waste is the way to go. Like Vermont farms. https://t.co/OGZ4FI9OFo https://t.co/mS7mJrU58Q
