i can skip virtually all the time-consuming steps - why marinate chicken - why reduce sauce - why . . . they are not essential, and for most of my butter chicken cooking, i don’t think i will do them

things that did make a difference - heavy cream - kasuri meth (dried fenugreek leaves) - blender things to try next time - cashew nuts - ghee - tomato paste - actually marinating - actually reducing

i tasted these very 5 minutes, and i still can’t make head or tail of the feedback loops dips and spices and stovetop cooking i can adjust within seconds. roasting takes dozens of minutes all i know if i follow what worked again exactly, it might work ugh
