i fucked up. parbroiled broccoli too long. all mushy. breaking apart when i mix with olive oil. keep roasting and roasting and it’s somehow burned to black and still gloopy. oversalted the dip into inedible territory. all fuck up. no one’s mad. life is good https://t.co/l9hCbksGGP

v2 (because pasta has such short feedback cycles too) with toasted sesame seeds, mirin (rice wine), soy sauce, poultry seasoning, cardamom, black pepper, lemon pepper, garlic salt. idk this also tastes great. what the fuck

ok in a fit of frustration i made another batch a/b/c/d/e/f testing a bunch of variables i found one of the six was acceptable it was the carrots par-broiled on a stove for 3 minutes and turned after 12 minutes https://t.co/BfHlv2sFer

i tasted these very 5 minutes, and i still can’t make head or tail of the feedback loops dips and spices and stovetop cooking i can adjust within seconds. roasting takes dozens of minutes all i know if i follow what worked again exactly, it might work ugh

i do have some learnings par-broiled longer made the carrots mushy and gross. par-broiling less just makes carrots bitter by the time the texture is any good flipping does… something important, somehow i don’t even feel like eating the rest.

olive oil, salt, & white pepper make any carrot—even raw carrots, or carrots roasted for 5 minutes—taste wonderful. maybe ill stick with that and a yogurt dip. keep the crunchy, roast it slightly
