getting myself to just start heating things up on a pan and *not worrying about it* before, i had this rationalist nerd impulse to need to know the recipe and how to sear everything perfectly and know when things would be done now . . . it’s just . . . how hard could it be?

it got me to just throw stuff in and *see* for myself if it seems hot/tasty enough that “seeing for myself” is more valuable a skill than i ever had thought

/getting yourself to look/ may be one of the most underrated skills there not just relying on a teacher-function to judge every action you’re taking, but that kind of shift that happens when you realise you can just *look* at a thing and decide for yourself
